Crimson red in colour, this Cabernet Sauvignon has vibrant aromas of tomato leaf, plum and dark chocolate with hints of clove and earthy tones. The palate is smoot and full, showcasing rhubard, olive and coffee, finishing clean with fine tannins and generous length. This Coonawarra Cabernet as it should be, reflecting perfectly the garden where it was grown.

The grapes were sourced from vineyards which showed the greatest fruit flavours during the growing season. The grapes were harvested in the late of the night and early morning then transported to the winery where they were crushed into static fermenters and inoculated with a selected yeast strain. Open fermented on skins for 7 days with temperature control between 18 to 28 degrees Celsius. Once optimum colour and flavour was extracted the wine was drained and pressed. After malolactic fermentation was complete the wine was racked and filtered into a mixture of oak for maturation.
